According to the spec table for BFG KOs in this size, the rim width range is 8 - 9.5". You could look up the specs for other brands, but I suspect 7" is too narrow for this tire. I don't know what the consequences are for going against the manufacturer's recommendation.

It will work, but you will get crown wear at an accelerated rate. I have mounted 12.5" tires to 7" rims before. Just keep an eye on tire pressures and rotate every 5,000 miles.

I wouldn't hesitate to mount 'em on a 7". I've seen lots of folks with 35x12.50s on 7" wides and without issue.

Reason i ask if because i have some 305/70-16 MTR's on my stock 16x8 alloys.
I just picked up a set of 16x7 steel factory tundra rims with the correct backspacing for CHEAP $.
I am going to get a set of more street friendly tires for longer trips and i am trying to decide what goes where. I will most likely put the street tires on the steel rims and go with the 285/75 flavor! :D
