just curious on what people normally cook up thats #1 good, #2 easy

I normally cook up "cowboy" breakfast

depending on how many people i have to feed, depends on how many eggs etc etc.

1 package bacon or my preferred is 1 lb fluff pack of "homestyle" sausage obrien type hashbrowns packaged or made from scratch. eggs.

i normally cook up the sausage/bacon first, pull out of pan put on paper towels. cook up hashbrowns, diced onion, green pepper and potatoes. after done put sausage back in. in a seperate bowl mix up some scrambled eggs.normally around 8-12 I mix in some garlic powder salt and pepper and Parmesan cheese. add the egg mixture to the pan with potatoes and sausage, mix around like scrambled eggs. when done enjoy.

there is probably a million things you can add to it, but it only takes 1 pan, some paper towels and a spatula. pretty easy cleanup and everyone seems to love it, I make this at home at least twice a week for the family.

I do the lazy version of your cowboy breakfast.

I brown a pound of mild sausage, then take out what I don't currently need, and add part of a package of Ore-Ida frozen o-brien mix and brown it.

Then I push that mix to the back of the skillet and scramble the eggs in the front.

After the eggs are done I scramble it all together, take if off of the heat, add shredded colby-jack cheese, and put a lid on it 'til the cheese melts.

The excess sausage gets cooled in the freezer, then thrown in a ziplock and mixed with the excess o'brien mix. That way subsequent meals are slightly simpler and quicker.

Oh, on tortillas is good, and simple.

I have a friend that likes to do a breakfast scramble skillet that uses a can of potato soup, but I don't prefer it.

thats a great way to do it! less work, heheh normally there are no leftovers and seems like I didnt cook enough although a 12" skillet with 2" sides is overflowing, maybe i have big eaters in the family. and yes Tortillas is awesome we do it often, little salsa and your set! hmm potato soup? like to see that recipe.

On our last trip I cooked bacon/scrambled eggs/hashbrowns. bacon first in one pan, browns in the deep pan, then eggs to order.

Second day, link sausage, eggs, and pancakes. brought the right amount of pancake mix in a plastic container. then just added eggs/milk to suit.

I have a deep dish cast iron pan (4") that the lid flips and becomes a shallow pan if I need two. Then I can use it with the lid to make chili or stew for dinner. I can put briquets on top for baking if needed.

I like the all-together style but the kids like their ingredients seperate...so I mix it on my plate.

When time allows I love Chili Verde with eggs. If I don't have time to make my own I like Trader Joe's Chicken Chili Verde in the frozen section. Heat in an appropriate size skillet to your group...crack the whole eggs on top of the verde, lid to the desired egg doneness...a little grate cheddar over the top...serve with tortillas.

Simple, easy and good. Thanks Mike S. for that idea at last summer's AT Pyramid LakeFest!

Or if we're on a run where it's brake camp fast then homemade granola is my fave...

I know its heavy but I always take my Dutch Oven everywhere. This is one of the old time recpies i have used for years. Fell free to add or remove anythign to your taste...

Mountain Man Breakfast
1 lb bacon, or pre-cooked sausage, or deli ham
1 Med onion
4 lb. bag of hash brown potatoes
1 pound of grated cheddar
2 doz eggs
1 Medium Bell Pepper
1 pack of mushrooms
The following requires 9-12 bottom coals and 15 -18 top coals:
Pre-heat 12" Dutch Oven. Slice bacon and onion into small pieces and brown in the bottom of the DO until onions are clear. Stir in the hash brown potatoes and cover; remove cover and stir occasionally to brown and heat potatoes (15-20 minutes)
Scramble the eggs in a separate container and pour the mixture over the hash browns. Cover and cook until eggs start to set.(10 - 15 minutes)
Sprinkle grated cheese over egg mixture, cover and continue heating until eggs are completely set and cheese is melted.
Optional: cover cheese/egg mixture with a small jar (~ 1 cup) of SALSA. Cover and cook for an additional 3-5 minutes. Slice and server like quiche. Cooking times will vary with the weather and your state of awake but it’s almost impossible to screw up. Serves 12+:eatchicke

I make it fun for the kids. "Brown Paper Bag Breakfast"

3 strips of bacon line the bottom of the brown paper lunch bag.
Add 1 hashbrown patty
Crack two eggs on top then roll bag closed and poke a stick through. Hold over coals to cook.

The bacon soaks the bag and protects it. The hashbrowns steam the eggs.

Everybody cooks their own. When fully cooked, roll the top down for the serving.

Clean up is easy. Burn the emptied bag.

I usually cook two so that the little one who dumps the burning bag in the fire has another one that is within a few minutes of being perfect ;)

and the paper bag thing sounds like fun for the kids ill have to try that. are all the ingredients raw? raw bacon, hash browns etc? how long does it normally take to cook that up?

We use the pre-made, partially cooked hashbrown patties. I haven't tried fresh potatoes. The bag gets close to blackening. I would say about the same time it takes to carefully cook two hotdogs on a comparable set of coals. Not long, but some times a drink while they cook helps to satisfy they hunger pangs while smelling breakfast cook.

My Dad is in Vancouver. We get up that way once in a while. Nice climate. Very stable. That big heat sink off the coast helps with that I am sure. No huge temperature swings like the high desert.

You're welcome anytime. I can't believe we're at the end of the first week of June already and I haven't flipped my fly rod! I need to STOP talking about getting together with you and just DO IT!

So this isn't a total hyjack...then I'd invite you over to my camp for breakfast ;-)

We usually do egg and cheese burritos with salsa and tea or juice, pretty simple.

If it doesn't sacrifice taste (or minimally so), I always go for ease of use and less cleanup. So for what it's worth with these type of breakfasts, I always carry Egg Beaters (tastes just like scrambled eggs) that you just pour out of a carton and precooked bacon or fully cooked sausage. (hate dealing with bacon grease when camping)...although that paper bag approach looks interesting and solves the mess issue.

We also invert the DO lid and heat up pre cooked sausage; remove use the grease to cook pancakes. Bisquick has these small plastic containers, just add water and shake. We just then make pig in a blanket. If cant tell I love to cook in a DO.:wings:

Lately I tend to do very simple breakfasts - a bread product and some honey or cheese along with a simple drink, usually a cold one or green tea. More small stuff.

I used to do the eggs, bacon and toast but it just doesn't sit well with me anymore and I find if I do the big breakfast I tend to get out too late.

I will be giving Henry's brown bag style a try though. That sounds great!

Potato, egg and cheese breakfast burrito. All you have to wash is a skillet, spatula, knife and cutting board. Don’t forget the Tapatio!

I must be one of the few cereal and milk people. For some reason it keeps me going longer than a bacon and egg fry up.

If I eat bacon and eggs, I bonk and have to eat a few hours later, cheerios can keep me going for 3.5 hours easy.

I have ziplock baggies of cereal and I get those individual (10oz) 2% milk containers.

No cooking, no cleanup; however, I gotta have my joe:coffeedrink:

A cheater to make your eggs fluffier?? For every 6 - 8 large eggs add a sleave of crushed Saltine type crackers. I've noticed it helps absorb salsa, so burritos aren't quite so messy.

mmmm, that looks good! I've been keepin it super simple lately, big breakfasts wreck me....

Boil water for coffee or hot cocoa, then use the rest of the water for the Quaker Instant Oatmeal.

I also like a simple oatmeal w/ honey & raisins...and some freshly brewed coffee.
Simple to make, easy to pack, and hard to screw up.

I tend to focus more of the elaborate camp cooking towards kicka$$ lunches & dinners.

To save plates and silverware or avoid washing them by using tortilla or pita pocket and fill with eggs, meat, and tater tots :chowtime: :)

I love breakfast food, I can eat it anytime day or night :-)

Though I often prefer eggs and toast for B-Fast, toast isn't easy on a stove and cold/hot cereal is nice, easy, and quick. Hot water on Kashi Go-Lean Crunch makes a nice oatmeal/granola. I'm eat this often at home too with a banana; low-fat, high-fiber.

I know whatever is cookin' in Brad's camp is worth a taste! He was always trying to share his very tasty dinners at the 2007 ExPo Trophy ☺

On one of our trips we're going to have to try staying in one place long enough for you to fix breakfast, that sounds great.

Like Spresso we usually eat a fast breakfast of ceral.

If we are in base camp and cooking for a group, here's one that folks seem to really like.

Coal Mine Breakfast
- Bake up a tube of biscuits in a 12" Dutch Oven
- Fry up 1 1/2 lbs country sausage
- Scramble a dozen eggs
- Mix up 3 packages of instant white gravy

Once the biscuits are done, layer on the sausage, followed by the eggs, followed by the gravy. Use top-heat only for 5 to 10 minutes until everything is piping hot.

My wifes venezuelan so we end up with venamex type breakfasts...

Arepas with pollo mechado/ atun con tomate et cebolla et chilli/ huevos rancheros...

Just about says it all.....

The flour comes in bags like flour, mix with water, a little salt and butter and fry/ griddle or bake

bread goes stale quick...these are fresh everyday

Cook cut in half and fill with the weapon of choice, or simply use instead of bread.

This is our favorite.....funnily enough made in venezuela...

This past weekend, my GF and I spent the weekend island hopping with our kayaks in the Passamaquoddy Bay (portion of Bay of Fundy, where whales abound and highest tides in the world). Every meal was terrific, but the best of the weekend was Saturday night. Set up on Spoon Island surrounded by sea birds and harbour seals we dined on Grilled Steaks, Scallops and Mussels hand picked from the flats as the tide turned, fresh fiddleheads found in the bush behind camp, grilled veggies, and a good Canadian Ale! Absolutely mouth watering!

Try Chilaquilas,

In Mexico they use up old tortilla chips this way, but it works great with fresh corn tortillas. Just don't use chips like Doritos or Santitas. They need to be real tortillas chips.

Oil in pan on med heat.
Add tortillas sliced in strips or chips.
Sautee till golden.
Add chopped onions if you like.
Add a mild salsa smooth not chunky, red or green, green chile or chile verde is great! I have used leftover chile con carne watered down a little.
Stir until chips or tortillas become soft but chewy.
Top with cheese and cover to melt.

I make it using eggs all the time, adding them before the salsa, just use less salsa.
Sausage or chorizo is awesome in it, add before eggs or salsa.

They taste like a quick enchilada
Also good for dinner
Top with sour cream, guacamole or fresh salsa

The best hangover food!

OMG, how funny....seems quite a few have basically the same Breakfast menu as we do...eggs bacon/sausage/ham and pre-made o'brien taters....just did those Fathers day weekend....but I like to take it all and put it in a tortilla and call it a breakfast burrito:chowtime: ...only dirty dishes are the skillet and spatula to clean:wavey:


Dang, now I'm hungery for breakfast..........again:chowtime:

If you see the finer details of the picture posted, these are hamburger bun size english muffins. Note the length of the Macdonald's style hash brown in proportion to the diameter of said muffin. These come in a rationed, 4 per package. Yes, you are thinking about this muffin sandwich right now...correct, quite tasty...

My friend Kelly and I made this breakfast up in a 20" oven a couple of weekends ago at a teardrop gathering in the California Redwoods. In less than 15 minutes the pot was empty.

This time we used 24 "grands" biscuits, 4 pounds of sausage, 4 dozen eggs and over half a gallon of gravy. Sure was good!!
