Tonight's dinner is currently consisting of.....as I type!
A wonderful homemade Half Pound Hamburger with Worcestershire sauce....lots of spices....Cheese Melting on da top at the end!....on the barbie!
ALL the Fixin's Installed!
Pepperoncini's on da side....!
....and a wonderful.... to remain anonymous Brewskie from Wisconsin! Da bes's Brewer's in da World!

My personal favorite recipe:
Boil Brats in a mixture of beer, chopped onions, and minced garlic until Brats are cooked through;
remove brats and put on grill;
continue to cook mixture on stove (simmer) and add sugar to "sweeten";
cook mixture until all beer boils off and onions caramelize (turn brown) into a thick consistency;
spoon "onion relish" onto a hoagie or hot dog bun, add a GOOD deli mustard;
top with (now) grilled brat;
place good DARK beer in available hand;
enjoy!!!
Burp up bratwurst all night and enjoy the flavors again and again!

I had a generic sharp chedar cheese quesadilla with Italian heirloom tomatoes that I bought at the farmers market today.
I hadn't been to the farmers market before, but I should go more often... I bought a big basket of these tomatoes for $3.50... Now I have eat them before next Sunday.

I finally shot a Blue Grouse on the opening day yesterday. That's what's for dinner tonight! Never was too serious about BG hunting but if the creamy white color of the meat and very mild scent is any indication I'm going to have to spend a little more time in the higher elevations trying to find a few more!

wonderrunner, brats are serious buiziness for me,, one of my all time favs. i am happy to see your last attempts with a good roll and just mustard, ketchup has no place on a brat.
i usually grill up a whole onion for two brats, sometimes a bell pepper. next time i make them i'll be sure to post a pic for ya, but i like to lightly grill a brat with sliced onion in the dutch oven, just till the onion is done, the brat will still be pink inside, but, then you take the brat and onions and wrap them in a homemade sourdough (pig in a blanket style) and bake the whole thing in the dutch oven, when the bread is done the brat is perfect.

So I've been stuck on tortillas, cheese, beans, and tomatoes recently. Last night I had imitation crab meat mixed in with all of that. It was good for the first few bites, but not the rest. Too much imitation and not enough crab. It was my take on a cheap fish taco, did not work out.

Homemade chicken noodle soup with a minimal broth and served over some good Yukon Gold smashed taters, the thicker the better...mmm.. I love comfort food on a chilly evening.

When we go camping....
we use meals-in-a-pouch idea. Basically pre-made meals that have a main course with meat/vegies/broth in one pouch, and rice/beans in another. Place'em both in a pot of boiling water and about 5 minutes later you've got a nice meal. No mess. Nothing to clean up. And we use the water once it has cooled down to shower temp...for our showers.

As I type...
"SWR's"...Young Whole Fryer Chicken Soup....
At 6pm the night before....place whole young chicken fryer into crock pot and top it off with fresh water.
Slice one onion and place around the top of the chicken.
Top it off with all your favorite spices such as.....rosemary, thyme, oregano, sage....etc. I tried some Bay Leaves this time for more flavor.
Turn on high and let it cook overnight.
The next morning about 10am....
Take out the whole chicken and de~bone. Be careful to get all the bones! You can add a little more water after you take the bones out. Heat up the water in the microwave Before you pour more in, or you will crack your crock! Do Not pour cold water into a hot crock pot!
Place meat back into the crock pot.
Cut up carrots, celery and place in the crock. Add more spices to taste. Add some eggs noodles.
Let it cook for another couple of hours and you are ready by lunch time!

Kalua Pig Tomorrow....baby!
I showed this earlier. But tonight I have pics of the "before" ....in the crock.
here goes....
I know you guys can do this! It's a Man Sport!
I was hungry for some of my Kalua Pig for the weekend...so here goes.
Pick up a 4 to 5 lb. Pork But*.
Place in your crock pot at 6pm the night before.
Take a steak knife and poke holes in da but*....!
Pour some liquid smoke all over the top.
Then sprinkle Hawaiian Rock Salt all over da top! (don't ask me what to do if you can't find that!)
The good news is ...It's ready for lunch by noon the next day.
The bad news is, you won't get any sleep All night because of the smells throughout the house and the anticipation this brings! Yum!

Now....
There is another way to eat this called .... "Kalua Pig and Cabbage".
Some people don't like the cabbage. Some do. Some cook the cabbage in with the Pig.
If you want to try it with cabbage...try just cooking up some cabbage on your stove seperately just before you eat.
Make sure you also make a huge pot of Sticky Rice to go with!

For some unknown reason.
I always seem to like to put something in the crock pot on Friday! I guess that way, it makes me prepared for the weekend. Good fun food, all weekend long. I can even take it with me if I decide to head to the desert.
So today.
I stopped by Von's because they currently have boneless beef chuck pot roast on sale for only $1.99 per pound! I always told the kids when they asked what's for dinner..."whatever is on sale kids"!!! That's how I shop!

That is a 3 pound beef chuck roast with Worcestershire sauce and onions... with Hawaiian rock salt and Spices!!

It will last me all weekend and then some!

Actualy last night. I cooked up 12 gallons of different kinds of Chili for our anual Christmas Chili party. Beef and pork with and without beans, Turkey with and without beans, and a vegitarian chili. :chef:
This is a two day process with the beef and pork cooked on the BBQ first and then simmered on the stove for 36 hrs until the meat is falling apart. :cow:

Stormy Night Comfort Food....
Today I started my special Winter Comfort Food.
Buy One Small Foster Farm Cleaned and Spiced Young Chicken. (Stater has them).
Put whole young chicken in Crock pot by 4pm the day before you want to eat it.
Pour some Olive Oil over the Chicken.
Fill 3/4 of the way with water, or at least to the top of the chicken.
Cut up one onion and place onion cuttings on top of and around the young chick! (I like young Chicks!)
Now ad more spices........rosemary, thyme, oregano, sage, garlic powder, ground pepper....and any other spice you like.
Cook on High..........overnight.
By 10AM the next morning......
de~bone the chicken.....very carefully because it will be falling apart!...YUM!
Now ad your Carrots, Celery, Potato's, and one more fresh onion. And a small amount of Egg Noodles (you can add more fresh noodles later, $1.00 a bag at Stater).
By 12 Noon.......you got it made....baby!

With your leftovers........
You can freeze to perfect portions to be able to re~heat while on da trailz!
It works great to add fresh noodles to your re~heated soup, so you don't have to deal with old soggy noodles from the original cook. So use noodles sparingly as you go along and it works out great! I feel the whole chicky bone thing really adds to the flavor of the whole thing!
It's Awesome!

It's been a while since I have done this. But Pork Butt was on sale today at Stater for just $0.99 cents a pound! So I had to grab some.....since it's gonna rain tomorrow! I also picked up some cabbage today so I can add to the fun!
It's in the crock and will be ready for lunch and dinner by 12 noon tomorrow!

Kalua Pig Tomorrow....baby!
I showed this earlier. But tonight I have pics of the "before" ....in the crock.
here goes....
I know you guys can do this! It's a Man Sport!
I was hungry for some of my Kalua Pig for the weekend...so here goes.
Pick up a 4 to 5 lb. Pork But*.
Place in your crock pot at 6pm the night before.
Take a steak knife and poke holes in da but*....!
Pour some liquid smoke all over the top.
Then sprinkle Hawaiian Rock Salt all over da top! (don't ask me what to do if you can't find that!)
The good news is ...It's ready for lunch by noon the next day.
The bad news is, you won't get any sleep All night because of the smells throughout the house and the anticipation this brings! Yum!

Now....
There is another way to eat this called .... "Kalua Pig and Cabbage".
Some people don't like the cabbage. Some do. Some cook the cabbage in with the Pig.
If you want to try it with cabbage...try just cooking up some cabbage on your stove seperately just before you eat.
Make sure you also make a huge pot of Sticky Rice to go with!

Well we just had a lovely fresh salad with home grown potatoes, beans.
To that my lovely partner added cheese in sml pieces, beetrooot,tomato and lettuce leaf.
We added some hamburgers to the mix and a glass of red wine each.
The Teenagers got cordial.
Like everyone else now I am hungry again. LOL

Slice up the onion and bell pepper. Get a small sheet of tin foil, and oil it a little. Put your goodies on the foil and install some fresh ground pepper and sea salt! Put on the grill next to the Brat.

Dave, do you like the black stuff as much out of the bottle? I tried the bottled stuff some time back and found it to be...well...a little different from the regular can or draught. Not sure what is was, but something wasn't quite right.

Trevor, to tell you the truth... i had a yard type glass from the freezer that i used for that exact reason. You're right it just didn't taste the same to me... when usually it's the opposite and tastes better out of a bottle.

We are about to have our first good rainfall in over 6 months. We have only had a couple very weak ones since!
I even have some logs ready to put on the fire.
So I thought it was time to put a Whole Chicken in the Crock Pot again tonight!
Here's how I do it.
As I type...
"SWR's"...Young Whole Fryer Chicken Soup....
At 6pm the night before....place whole young chicken fryer into crock pot and top it off with fresh water.
Slice one onion and place around the top of the chicken.
Top it off with all your favorite spices such as.....rosemary, thyme, oregano, sage....etc. I tried some Bay Leaves this time for more flavor.
Turn on high and let it cook overnight.
The next morning about 10am....
Take out the whole chicken and de~bone. Be careful to get all the bones! You can add a little more water after you take the bones out. Heat up the water in the microwave Before you pour more in, or you will crack your crock! Do Not pour cold water into a hot crock pot!
Place meat back into the crock pot.
Cut up carrots, celery and place in the crock. Add more spices to taste. Add some eggs noodles.
Let it cook for another couple of hours and you are ready by lunch time!

Bachelor's Delight...Sourdough Pizza Bread!
First.....stop at Big Lots and get some awesome San Francisco Sourdough rolls for a buck!
Then head over to your local .99 cent store and pick up some Farmer John Habanero Sausage.
Then stop at Stater Brothers and pick up some four cheese sauce for just .99 cents on sale! Use your spicey cheese you have on hand.
Slice the bread in half and begin to add.....starting with the sauce.
Once prepped....broil it in your toaster over on high (450*) and set your timer for 30 min. Once you see the sausage is cooked/brown, reduce the heat to 200*......for the remainder of the 30 min.
Pre~Broiled.... Ready to put in the toaster oven.

So my wife landed a job last week at a residental treatment facility as their therapist. The have a gourmet chef who cooks three meals a day. London Broil and veggies in the toaster oven for one.
If it's too cold and stormy out to BBQ. And you just don't know what to do to cook for one. London Broil and veggies in the toaster oven works great! You don't have to fire up the huge oven!
Included tonight. Zucchini, Red Bell Pepper, Jalapeno Pepper, Red Onion, and Broccoli. Seasoned salt and cracked pepper.
I like to dip my veggies in Buttermilk Ranch Dressing, and put it on my Baked Potato.
Baked Potato goes in the microwave. Salad on the side.
Yummers!
Easy clean up too! I use foil on the broiler pan to keep it clean. Then I put a second sheet on the broiler pan to cook on. When done cooking, just fold up the messy foil and throw away. Your broiler pan below is still clean with a fresh sheet of foil!

Here is my London Broil/Teriyaki veggie stir fry. Pick your favorite veggies. Have your Teriyaki sauce ready. And just go for it!

I'm not quite 5 weeks removed from bariatric surgery, and am just now able to start eating some "people" food again. (I've also lost just over 60 pounds. Yay!!)
So last night I made a nice telapia chowder type meal. I had some very nice pre-made corn and lemongrass bisque type soup. I put a little olive oil in my non-stick skillet and when it got good and hot I tossed in a fresh telapia filet. I seasoned it with a pepper spice blend, a few generous shakes of hot sauce, a sprinkling of Greek seasoning and fresh squeezed lime juice. Once seared well on one side I flipped it, repeated the seasoning and let it sear again.
Pulled it apart into nice, bite sized chunks, stirred it into the soup, put in a couple spoonfuls of Greek yogurt to thicken it a bit.
Mmmm... sooo good. 'Course I'm just glad to be eating some real food again...

Not dinner, but a typical work week lunch for me at work.
I have been watching my diet more closely the past few months, and inputting more vegis and fruit into an already vegetarian diet I have been on since about 1982 or so.
The X got me into it :D
Anyways, within the past two months I have gone form a 40" waist size in pants to almost a 36".
Wearing 37" now, and they are a tad loose.
Only lost about 4 lbs or so, but I am also firming up.
I walk twice a day at work, on average about three miles or so.
Also doing bicep curls with 4x15 sets about five days a week.
Back to the lunch, I buy the Green Giant Steamers which you zap in the microwave for about six minutes, then peel the bag open.
Very low in calories.
This one is the red roasted potato with green beans.
A Boca chicken patty (insert fake cluck sound here), and one whole tomato.
Pretty much what I eat five days a week at work for lunch, although I vary the Green Giant Steamers as they have many different type.

Dinner when I get home form work is simple.
One whole avocado, another tomato, and a few Triscuits.
Then there is the banana at break in the morning with a few fat free Fig Newton strawberry flavored.
I am getting plenty of my daily dose of fiber, fruits, vegis, ect.
I also gave up Johnny's Season Salt a few years back to get away from the MSG.
My sister turned me onto the Morton Seasoning Salt in the picture.
I cook a lot more fancy stuff on the weekends.
Tomorrow (I may just snag a picture) I will be cutting up red bell peppers, small whole white potatoes, pineapple chunks, tomatoes and more to grille up on my barbecue.

Kabobs on the gas grille.
I used my GoPro HD camera for these shots, and it does not have have a view finder, so it is kind of hard to tell what you are shooting :D
It is wide angle, so it picks up a lot of stuff.
These are so easy to make, and I have taken them camping too before in the past.
I forgot to get onions, but the kabobs have:
* canned whole potatoes cut into thirds
* vine ripe tomatoes, I prefer the small cherry ones, but I had to use the bigger ones up
* Tofurkey dogs cut up
* brown mushrooms
* pineapple chunks
* red bell peppers
Side dish:
* Bush Griller beans
* Uncle Bens Rice Pilaf, microwave version
Beverage:
* Henry Weinhards Rootbeer, the only pop I will ever drink

That crap is from the two big fir trees, the same one that looms over my FJ and dumps spooge on it and the tent too.
You can see their massive trunks, they are quite old and big.
Maybe I should put a coat of wax on the table, that might make cleaning the table easier.
I usually have one of the maintenance guy's pressure wash it when they have their pressure washer out doing other stuff.

Dinner one night yesterweek up at Mt. Rainier.
* One can of chili simmering on the Camp Chef Denali stove while I prepped the other stuff.
* Tostito brand blue chips as a base.
* One whole avocado cut up laid on bed of chips.
* Chili poured over the above.
* One whole tomato cut up and spread around the chili.
* Fine Mexican cheese sprinkled over the top of mixture.
All washed down with a Henry's rootbeer.
Those blue enameled plates are deep, so while it did not look like a whole lot, I was stuffed afterwards and prime time for the black flies up there to make me their main course.
Had a few chipmunks too put their front legs up on the table across from me looking for handouts.
Not OK to feed them, and there was even signage on the table stating we had black bears in the area roaming around looking for food, and to make sure all food and garbage were not left out during the night.
Food tastes so much better when camping.

Ingredients
1 lb Petite Sirloin Steak
4 Tbsp Vegetable Oil
1 Bunch Green Onions
5 Cloves Garlic
1/4 Cup Fresh Ginger, finely diced (about 2-3 inches of ginger root)
2/3 Cup Roasted/Unsalted Cashews
1/2 Cup Water
4 tsp Corn Starch
2 Tbsp Soy Sauce
2 tsp Sesame Oil
2 tsp Oyster Sauce
2 tsp Chinese Chili Sauce
Pre-Trip Preparation
To save space, fill a small plastic container with enough vegetable oil for all of your cooking needs. Toss this into your dry food box. In a second small plastic container, combine Soy Sauce, Sesame Oil, Oyster Sauce, and Chili Sauce and toss container into the cooler. Finely chop the garlic and ginger and place in a third small plastic container. Put the Corn Starch in a 4th small container.

Cooking Instructions
Cut green onions into 2in long pieces and set aside. Cut steak into pieces 1/4in thick, keeping the pieces short enough to be bite-sized while removing any unwanted fat. Heat vegetable oil in medium sized skillet over high heat. Add steak to the skillet and brown for 5 minutes, stirring occasionally. Add garlic and ginger to the pan and cook until softened (about 2 minutes)

Stir in the remaining ingredients, retaining the corn starch and approximately 2 Tbsp water, and cook until the beef has reached your preferred doneness; remove from heat. To thicken, add the remaining water to the corn starch, shake to combine, and then mix the corn starch mixture into the dish.
Serve over Basmati rice or another white rice and enjoy!

I don't have a picture because I haven't cooked it yet, but I'm making "Monterey Skillet Hamburgers". I do have a recipe!
1 pound ground beef
1 can (4 oz) chopped green chilies drained
2 tbsp chopped fresh cilantro
1 tsp chili powder
1/2 tsp salt
1/8 tsp cayenne
1 medium red onion thinly sliced
1 medium avocado sliced
1 slices Monterey Jack cheese
Mix beef, chilies, cilantro, chili powder, salt, and cayenne. Shape into 4 patties about 1/2 inch thick.
Spray 10 inch skillet with cooking oil and heat on medium high, cook onion 1 to 2 minutes until just tender.
Add beef patties to skillet, cook 10 to 12 minutes turning once until no longer pink. Top patties with onions, avocado, and cheese, cover and heat until cheese is melted.

Ok, these burgers were good but just a few problems. I like cooking with cast iron but I think a non stick pan would have been better because the burgers stuck pretty badly. Also, medium-high was pretty high to cook the patties on. Finally the burgers fell apart easily, they weren't crumbly like with low fat burgers but they just didn't hold together. I don't know if they need an egg or some bread crumbs or both, but they need something to help hold them together.

I prefer crackers, Keebler Club crackers are my favorite, just enough salt and a slight buttery flavor!
Yesterday, my wife made "Moose Loaf":elkgrin: She made meatloaf, using 1/2 moose burger, and 1/2 hamburger.
That and some fresh picked green beans, steamed with some onions and a dab of butter on top after the steaming.

Moose sounds fun. In Montana our moose hunting is a lottery system and if your name gets picked for a tag you have to wait another seven years before you can get in the drawing again, so to get a moose license is a pretty special thing but its only half the fun. To actually shoot the moose is a whole other story..... I've got an elk license and a deer license this year so hopefully I'll fill the freezer.

A group of us applied for 15 years, with no luck. (you apply in groups of 2-4)

It takes 10 years to get the preference:Wow1:
In that time, 2 of our buddies passed away, and I became disabled to the point where Moose hunting would be almost impossible, certainly impracticle.

Montana hunting is good, you can get whats called a Deer A tag (antlered buck whitetail or mule deer), an Elk A (brow tined bull), a Deer B (either sex white tail or antlered mule deer), and an Elk B (either a bull or a cow depending on which hunting district you live in), and those are the general season licenses that are easy to get, there are other licenses with varying rules depending on your hunting district. My wife and I are staying away from corn fed beef as much as possible and going with grass fed only and at our butcher it doesn't cost any more than the crap at the grocery store, but to go a step further I like to hunt and get some 100% organic and hormone free venison, and then that way I can also be absolutely positive it was killed humanely and handled properly before it gets to my freezer. Taking a lot of pride in the ingredients of your food makes your food so much better.

Wraps:
Grilled chicken, lettuce, vidalia onion, provolone, and horseradish sauce - served with tater tots.
The Peps! 96 oz. of Pleasure...at only $4.99....! Yummers!

I went through 3 jugs of those last year (and even saved the cool jugs to use to store things in the SWR, I can't throw anything good away ya know. Especially Plastic!).
Now they have another brand called Appollo, 128 OZ. for just $4.99. Still just as good, and Imported from Turkey. I have no idea how they can grow them, package them, ship them all the way from Turkey.....and still retail them for just $4.99. Amazing.
I love ethnic markets. They import things that you would never see at a big box grocery store. And they always have great prices. And it's fun!

For me, the key to good tofu is cooking it right. It took me awhile to get it to where I like it. I've found that a really hot pan/wok and then putting a lid on it to crisp up the outside gives really good results.
I made major, major lifestyle changes earlier this year. Part of that was pretty much removing meat from my diet. I'll still eat a little bit of meat every once in a great while - maybe a piece of bacon in a breakfast taco or something. But in general I'm probably 99% vegetarian, with probably 1/2 of what I eat being vegan. Coupled with the bariatric surgery that I had at the end of March, I've lost so far a person's worth of weight with more to go. I'm also feeling sooo much better now that I don't eat any processed stuff. Nearly everything I eat is organic, unprocessed, no additives/preservatives/evil chemicals. It's good stuff.

Don't buy the Louisiana brand! Tabasco or Crystal (at worst) brand is what locals in Louisiana eat...
For backpacking (no refridgeration) my favorite was Zataran's Jambalaya box mix with sliced smoked sausage, canned chicken, and andouille (from Jacob's Andouille in Laplace, LA ). Serve w/ Abita beer if you want to do it LA style.
Someone mentioned artificial crab meat earlier. My wife makes a crab meat pizza that's easy.
Canned crust (comes like canned biscuits). Spread out and cover with a pack of the semi-frozen artificial crab meat. Pour over melted butter with fresh crushed garlic and black pepper. Add lots of mozzerella and a bit of parmegean. Bake for 20 minutes or so until the crust browns.

A favorite of a lot of people, fresh venison tender loin wrapped in bacon grilled over hot coals. Plus the usual fried corn with red onions and mashed potatos. I cooked the potatos in milk and butter then mashed them and it worked great.

My neighbor gave me a venison backstrap from a deer he shot a couple weeks ago.
I took it with me up to mom & dad's for Thanksgiving and cooked it Thanksgiving day.
I brined it in a typical brine - sea salt, black pepper, garlic powder and some "Slap Ya Mama" seasoning. Left it in there for about 5 hours.
I then took it out, butterflied it and pounded it out into a paillard - about 1/4" thick.
I had some sausage from Southside Market (http://www.southsidemarket.com/)in Elgin (if you're from around here you know this place - if you're not, you have my condolences). I cut the sausage up into maybe 1/4" chunks, julienned some jalapenos, diced about 1/2 an onion and minced up a bunch of garlic. I mixed all that stuff together and piled it in the middle of my venision paillard.
I rolled it up and then wrapped thick cut bacon slices around it, covering the entire thing.
Then I took coarse ground black pepper and covered the bacon with it. Poked some skewers through it to hold it all together and then put in a smoker with hickory chips at about 225 degrees for about 2 hours or so.
Pulled off and wrapped in foil and let it rest for about 15 minutes, sliced into 1/2 inch medallions and I decided to forego being a vegetarian for a little while.
Amigos & amigas - this was the unanimous favorite item of our Thanksgiving meal. I wish I had pictures and I wish I had some to share with y'all. It was delicious.

Some time ago I invented Darin's Drunken Dessert.
It varies depending on what's in the liquor cabinet. I made it over the weekend. I shared some with my neighbor who gave me the previously mentioned venison and I've brought most of the rest of it to work with me today. I say "most" because I had to do some quality control testing before sharing... :drool:
Ingredients - apples. I bought Granny Smiths and Fujis. I like the crunch and rustic appeal of leaving the skins on. I just chopped up I think 2 of each - and these were some big apples. Mmm... Added probably 1/2-3/4 cup of sugar and generous amount of cinnamon and fresh ground nutmeg. And then stirred the apples around to make sure they were all covered.
Next - in a pan I melted 1/2 cup of sweet cream butter, maybe 3/4 cup of sugar, some fresh ground nutmeg, probably 3/4 cup of Baileys, 1/3(?) cup of Frangelico, 1/2 cup of Butterscotch schnapps, and maybe 1/2 cup of Jameson. I brought this right to a boil and then simmered to reduce it down by about 1/2.
While this was simmering, I mixed about 2 cups of bisquick, 1 cup of sugar, some cinnamon, a cup of milk and 1/2 stick of butter cut in chunks. This was a kinda runny kinda chunky (butter) mixture.
I poured the liquor mixture over the apples and stirred it well. Then I poured the bisquick mixture over the top of that and made sure the butter chunks were somewhat evenly distrubuted.
Cooked the whole thing in a silicon brownie pan at 450 for about 20 minutes.
Took it out, let it set up for a bit and mmm.....
It ain't pretty but lawdy, lawdy... Sure is good!!

since we are getting near move point and have been packing stuff our food supply is getting lower (purposely) So since my wife has been working so hard packing i made breakfast. pancakes, sausage, and eggs.
Cooked up a tri-tip last night.
Tonight's dinner will be a toasted roast beef and extra-sharp cheddar on sourdough sandwich, with black beans and salsa mixed together for a hot soup to go with.

i have an awesome smelling and looking itailian pork sausage and ground moose meatloaf in the oven right now in a cast iron pan. its only been in for about 20 minutes and i dont know if im gunna be able to wait till its all done:Wow1: .....cant resist the smell

darn i forgot the pictures, but i can tell u it was by far the best meatloaf ive ever har in my life. gonna have to make somemore here soon. no mcnuggets for me

Tonight we are eating a pork center cut loin. Cooked on the grill smoked with some pear tree wood. I will also cook some potato packets on the grill some with jalapeņos and some without.

Tofurkey Italian Sausage
I just spray grilling spray on the food everytime I rotate them, and add Mortons Nature Seasoning salt to it.
Also bought a 12 pack of Knorr rice pilaf off of Amazon the other day.
My local Safeway has Knorr in Spanish Rice and one with broccoli and cheese sauce, so I found the plain on Amazon.

Very simple dinner for Friday evening, I am saving the barbecue for Saturday and Sundays dinner.
Took just a few minutes to whip this up, it could easily be made while camping.

* Four Cheese Mexican sprinkled on top
* Nuke it, nuke it, nuke it, for 40 seconds, then another 25 or so seconds until cheese is crying for mercy from all the radiation

* Red leaf lettuce cut up and put on top of the salsa

When I was married (X was a Seventh Day Adventist) we had these quite often.

What do you stuff your fungi with?
I grill mushrooms on a skewer just about every weekend when it is nice during the summer.
Just bought around 20 mushrooms today so I would have enough for two nights of barbecuing, and to cut some up for an omelet in the morning.
But I have never stuffed any before, but would like to try it.

Homemade pizza! I like to use the dough and sauce recipes from www.pizzatherapy.com.
I always mix it up as far as toppings. Last night a tossed on fresh sliced mushrooms, onions and pepperoncinis, as well as pepperoni and sausage. It was good!

Made up a batch of kabobs Saturday morning, and strung the mushrooms as always on a skewer.
But after seeing the stuffed mushrooms above, I took them off the skewer meant for Sundays dinner, and I pulled the caps off and stuffed them.
I took some of that Deans Ranch dip I used for Friday nights dinner, and I mixed it with some 4 cheese Mexican, and spooned it into the caps.
It turned out pretty good.

Nice job. I, too, had skewers last night. Teriyaki chicken, yellow sweet onions, zuchinni and whole tomatoes on the skewers.
I like putting the whole tomato on the skewer because it gets soft and delicious; then it spreads juices on the whole plate when you cut it open. All basted with olive oil or teriyaki! Yum! Paired with a Chateau-neuf de Pape wine from Trader Joe's.

While camping last week we cooked up some pretty good stuff.
Probably the single best meal was also one of the easiest. Found Hatch chiles for .61 a pound and bought a bunch of them. Roasted them over the campfire and then made tacos for breakfast - scrambled eggs with cheddar cheese and a bunch of green chile on a fire-toasted tortilla. Fresh ground and perked coffee - not much better than that.
Then I made a stew that was really good, but so spicy it was hard to enjoy.
More roasted green chiles, fire roasted tomatillos, fire roasted corn and some left over grilled pork chops that we cut up into small chunks.
Took a big cast iron skillet and cooked up some diced potatos and onions. When they were about 3/4 done, added a bunch of coarsely chopped mushrooms and a generous handful of garlic. Let that sit and think for a bit and then added the chiles, tomatillos, corn and chops. Dumped in some water and some left over coffee and a bag of menudo seasoning. Covered it and let it think for awhile.
Heated some tortillas over the fire and then served the stew with sliced avocados and fresh cilantro as a garnish. Some of the chiles were really, really hot so it unfortunately spiced the stew a bit warmer than preferred, but the overall flavor was really, really nice.
