Head over to Golden Spring Szechuan Restaurant on the 3 Road in Richmond for inspiration. Try the country style beef. It is a spicy hotpot with loads of chilis and szuchuan peppercorns. I've tried a few recipes in an attempt to recreate it, but I've only come close.
