Would a Mac Mini power a touchscreen?

Which one(s)? I'm pretty ignorant as to what components are compatible with the Mini (or any Mac for that matter). I've never used anything other than a Mac with Mac components...

I'm swirling ideas around in my head for an interior roof console with my radios (or rather the detached faces or controls) and a fold-down touch screen connected to a MacMini behind the seats.

Any thoughts?
