Sounds like you've made the right choice for your needs.
I've been using stubby, "ATV length" rubber valve stems. They are tucked in very close to the wheel minimizing the chance for damage.
I put a set of these in my Ranger a couple of months ago. Well worth it, especially now that it is well below freezing in my area.

I'm running Duratrac 265/75R16 "C"s on a Ranger. They are in my opinion excellent at everything I've thrown at them.
I drive 50% gravel, and they aren't gouged/torn up from it like some tires...
If towing is a major part of you plan, you need to stick with a fullsize, preferably 3/4 ton. Your current truck fits the bill, but I can see why it's low mileage when it returns 8~ MPG! Seriously...
Neat idea. A strap or two going down to the wheel or under the tire would add extra stability and wind resistance.
