Are there any machinists in this forum who can custom make these ?
These are specifically for the 5-bolt 1979 Ford F250 Dana 44 knuckle and are currently unavailable.

really? This forum too?

Find one with the same diameter and modify it to match the bolt pattern.

Done.

The amount that you would be taking off and where it's being removed is not going to noticeably weaken the knuckle.
If he is doing the alignment himself I bet he could take down what he needs with grinder and finish it up with a belt sander.

Will 1/2 ton D44 shims work?
They are 4.75OD and 3.25ID.
Mine are a high density plastic. I run them on my ScoutII. It might not be as heavy on the front as your F-250 but I have never had a issue with them.
Have you tried alignment shops..the techs usually have a lot of used stuff laying around.

I was gonna say, I thought Moog was offering them still... If your axle has the threaded upper tapered insert, you can use an SPC 23000 series insert to change camber...
