I have been reading up on the 8.1 and it seems that these were prone to using/burning oil, have you had any issues with this?

Yes, the big blocks love their oil. This engine has been no exception, but it hasn't been beyond OEM spec.

Are the front seats heated or non-heated, I ask because they came both ways. I made this assumption the other day when I went to look at one that turned out to have non-heated leather seats.
