Brazilian Maionese style Potato Salad

The next time you decide to do some beef on the grill, try some:

Brazilian Maionese Potato Salad

5 potatoes
10 prepackaged, peeled baby carrots
1 cup of frozen green beans
1 cup of frozen green peas
10 Queen sized olives
1 14oz can of hearts of palm
1 32oz jar of mayonnaise (I used 2/3 of the jar)
2 tablespoon of EV olive oil
1 tablespoon of finely chopped onion
1 tablespoon of finely chopped parsley

Preparation:
1. Dice the potatoes into 3/4" chunks, and cook them in water and salt.
2. Cut the baby carrots into 1/8" slices and cook them lightly in water and salt.
3. Defrost and drain and the Green Beans and Peas.
4. Drain the palm hearts and cut them into small pieces.
5. Cut the olives into quarters.
6. Put all ingredients in a bowl, mix well, add salt and pepper to taste, and let it rest a day before serving.

This goes great with Brazilian style beef!

This potato salad rocked!

We both really enjoyed this Mark, and T doesn't normally like Potato salad but she hit it a few times for a refill. Didn't get the chance to tell you how good it was.

yeah mark, i woulda went back for lots more at cleator, but i wanted to be polite and save some for everyone.

I admit I had a couple helpings as well :beer: The posole was great too. In fact, everything there was awesome, especially the people!

btw, after that w/e and all the talk of the brazilian steakhouse i went to dinner that wed. and tried my best to eat them out of buisiness. man i love that place.

crawler i thought you might like to know, i made the tater salad per the recipe here for a christmas party last night,,, it was given thumbs up by yet another crowd.

Glad you brought that Mark. I was going to bring my bacon & blue cheese potato salad but I'm not sure it would have complimented the bbq as well as yours. Good stuff!
