In looking back at the OP.
There are several items that I would have in a "Stock Truck" that are not on the list at all.
Road flares, they are great markers and will start a fire when nothing else will.
Basic hand mechanics tools, should be obvious.
Three coils of wire and electrical tape, 18-GA, 16-Ga, and 10-Ga wire and good quality (3M) black tape.
Bailing wire, and zip ties.
A bar of soap and Black Pepper, RTV Silly-cone, unopened.
Enough heater hose and clamps to loop out the heater.
A gallon of water and several quarts of engine oil, engine oil will work in anything but nothing else will work in an engine. ok, ok maybe some ATF if there is room.
In these new fangled computer encrusted vehicles I would carry an inexpensive scanner AND THE BOOK!
A hand full of various sized nuts and bolts including lug nuts
2 10-foot lengths of chain with link hooks bolted on.
A simple come-a-long, actually 2 of them.
A Snatch strap and a Tow strap. "Real (strong) tow points" on the front and back!!!!!
A full sized shovel Round point with a sharpened edge protected by split hose.
A Hatchet, and a sharp one.
A rechargeable Flashlight.
2 fire extinguishers one Halon based.
A 12VDC Trouble light in the form of a spotlight.
Some TP inside about 6 Zip-lock bags...
All of the above should fit into a "Milk Crate" except the shovel. The whole thing should be secured into the rig preferably 'locked in'. Secured so that you can roll off the top of ... and it will all be nicely packed at the bottom.

Just a thought.

You've been tasked to take a trip overland through a remote environment.

These are the items you already have:

-dry food( canned,MRE or dyhydrated style)
-stove&fuel
-water
-clothes
-first aid kit
-sleeping bag for each occupant

mmm remote...

no mention of budies - so cb's toast
remote could be anywhere so spots toast due to coverage
mres so fridge is toast
anything outside US firearms are illegal so thats toast
Shade nice to have
something to sit on ..again nice to have

I mean really its all nice to have and be comfortable
.

But self reliance in a remote location....spare gas- something to sleep in against the elements...and something to get your truck unstuck.

The rest is nice to have, but not necessary
