Jalapeno Black Beans
Ingredients:
1 15oz can black beans
1 medium jalapeno pepper, finely diced
3 cloves garlic, finely minced
1/4 cup onion, diced
1/2 Tbsp vegetable oil
Pre-Trip Preparation:
Open and rinse the can of black beans in cold water, placing them in a plastic container. If you are on the trail, as we were when we purchased the fixings for this dish, simply open the can part way, drain the liquid and add water to rinse.
Cooking Instructions:
Dice the jalapeno pepper, onion, and garlic and set aside. In a small saucepan heat vegetable oil on high heat to the point when it begins to shimmer; add diced vegetables. Saute, stirring constantly, for one minute or until the garlic and jalapenos become fragrant. Lower heat to medium and stir in the black beans, cooking while stirring constantly until heated through. Serve with your favorite fajita fixings!

The black beans sound great. In my variation, I would add a little Mexican oregano, some cumin, and I'd use a chipotle pepper rather than a fresh jalapeno. A chipotle for those of you who don't know is a smoked jalapeno. If this were a main part of the meal, some cotija cheese and a dollop of sour cream would work well too.

I will be happy to share some recipes in due time. Winter isn't overland season for me, so expect more down the road. I have plenty of ideas that I use at home and that would work just fine when off the grid--the problem is, I don't generally follow recipes. I usually make things up as I go, and I add to my repertoire by using other people's recipes as educational background to creating my own. I'm not usually one to measure ingredients, so to pass something on to you, it takes me extra effort to write it all down.
