Making a griddle. What material to use?

I'm not sure I get it. Why not just leave the grate on the stove and just use a cast iron prefab griddle? You are saving yourself just a few ounces, reducing functionality and it seems if I am understanding this making things more complicated from a maintenance perspective. What am I not seeing here?
