Simple Camp Balsamic Vinaigrette

Here is a simple dressing I've prepared in the field many times. It's a classic 'workhorse' in the camp kitchen and works great as a salad dressing, marinade for pork/beef/poultry, and even a dipping sauce for a loaf of bread.

Simple Balsamic Vinaigrette
1/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1/4 teaspoon kosher salt
1/8 teaspoon white pepper
2 tablespoons basil
2 teaspoons thyme

Add the olive oil, vinegar, salt and pepper in a mixing bowl or small plastic travel container. Finely chop the fresh basil and thyme and add to mixture. Shake well and serve.

I usually store it in one of those small screw top plastic (zip-loc) type containers. That way I can toss it in the fridge and incorporate it into the next couple days worth of meals.
