I remember seeing a while back someone on here who had canvas seat covers on their 4runner, taco, or land cruiser (not exactly sure). These canvas seat covers also had a pouch on the side and the guy had a hand radio stored in it. I've been looking around all the build pages and I'm starting to get dizzy lol so any help pointing me in the right direction would be greatly appreciated.

The ones you are looking for are Escape Gear covers. Can be seen on Equipt1 website for 80 series.

There are also these, although probably not what you were looking for exactly. Suprisingly durable, cheap (found them at Autozone) LOTS of pockets. Only downside is fitment, which is really pretty good for a generic seat cover. Custom would obviously be better, but these aren't bad.
