Trailer power - one BIG battery or two small ones?

If the battery has a reserve capacity rating instead of an amp hours rating, it's almost certainly a thin plate starting battery rather than a thick plate deep cycle battery.

That battery has an advertised amp hour rating.

Yea. that part about the type being "marine and recreational" usually means that the plate thickness is somewhere in between "starting" (thin) and "deep cycle" (thick).

Any data on the depth of discharge vs. number of cycles life?

Sears doesn't specify it, but the battery is an Odyssey PC-2150. Maybe Odyssey provides that information on their site?

ETA: Yes they do. http://www.odysseybatteries.com/battery/pc2150.htm

Deep cycling capability: 400 at 80% DOD

If I read that right, it's 400 cycles at 80% discharge correct?

Yup, you got it. Now compare that to the cycles of a true deep cycle battery with thick plates. (I'd do it but my netbook battery is about to die.)
