dinner anything meat with rice ;) kalbi or something of the like
anything meat and stuff to tortillas is also good
we bring homemade fried rice we just reheat sometimes

burgers of course and of course hotdogs with the kids :)

getting into the hobo pie or those fold over pan things trying to learn a few sandwiches and pizza stuff as its fun for the kids

I've really been intrigued by Rice and Beans lately. It really is a one pot meal.

Zatarain's makes a couple of good varieties if you really want to make it easy, just be sure to get the Low Sodium option. Brown some un cased Chorizo then add the water and mix.

But even better is making it from scratch. Lentils are great as well and don't need to be pre soaked like other legumes. Plus they are chock full of fibre and protein and don't need refrigeration.


Indian style Lentils and Rice:

Equal amounts Brown Rice and Lentils.
Water at about 3.5:1 ratio.
Chicken Bullion and Red Curry powder
to taste.
Boil for about 30 minutes.

I've been on a rice and beans kick as well. I usually start by sauteing bell peppers and onions together, then adding precooked chicken and some chicken stock. Then I add precooked black beans and let simmer for 15 min or so. I cook rice in a separate pan, then spoon out a bowl of rice and cover it with the beans. Can't hardly go wrong with any rice and bean recipe.

With cold weather on its way, these are a couple of my camping favorites.

Breakfast - Breakfast Bagel:
Two fried eggs folded to fit on the bagel, three slices of bacon, slice of your favorite cheese, served in a sliced and grilled bagel. It's a great "grab and go" breakfast.

Dinner - Baked Ziti:
Prepare at home: Boil ziti until al dente. Drain, cool, put in gallon zip lock. Cook 50/50 mixture of sausage and hamburger with Italian seasonings. Cool and bag.
At camp: Put ziti and meat into Dutch Oven. Pour in a bottle of favorite Classico spaghetti sauce over ingredients and mix. Cover with grated mozzarella. Add coals to top and bottom, heating until bubbly hot. Slice French bread, spread on butter & sprinkle with garlic powder. Grill face down until golden brown.

Dessert - Fruit Cobbler:
Drain 2 large cans of peach slices, pour into dutch oven. Drain 1 can of pineapple pieces, add to oven. Drain 1 can of mandarin oranges, add to oven. Sprinkle on cinnamon & nutmeg to taste. Sprinkle with 2 tablespoons of corn starch (to thicken juices) and mix well. Top with 2 tubes of cinnamon rolls (either whole or torn into pieces). Bake with coals on top and bottom until the cinnamon rolls are golden brown. Top with icing that came with rolls.

Just did a great easy beans dish

Really easy and really tasty

Can of butter beans
Can if crushed tomatoes
A few rashers of good smoked bacon
A pinch of smoked paprika
One onion chopped

Get the onion going with the bacon
Once the bacon is looking good chuck the contents of both cans in liquid and all
Bring to the boil and then let simmer for a couple of minutes.
If you have some, drizzle a bit of olive oil and red wine vinegar through just before serving

Also when nearly done make a couple of wells and crack an egg into each well, pop the lid of frypan on and cook until eggs are done to your liking

I just cooked up this Pork Roast dinner today in a Burton-"Stove to Go", AKA, 12volt lunch box stove. I didn't get too creative as I was in a hurry and it was a but if an experiment. It took about 2.5 hours while I cruised down the interstate in my 18 wheeler. ImageUploadedByTapatalk1353471189.523107.jpg

I wired up a 30 amp breaker to a cigarette lighter socket as a normal 15A fuse won't cut it. All ingredients were placed in an oven bag at once, placed in the oven and the lid closed. It started smelling pretty good after 1.5 hours.

I cant believe no one has mentioned ho-bo dinners.

Take a burger patty, sliced carrots, sliced green pepers...pretty much any veggie or potato your heart desires...Ive even tossed in a tomato...toss all of that (with your favorite seasonings) into a piece of foil. Wrap all of that up so its good and sealed and toss it on some coals or any source of heat. Ive also put a few slices of bacon and cheese into the mix. These are great if your going to be out for the day. You can make them up ahead of time, put them into the cooler, and get them out when your ready to cook them.

My favorite single skillet camp meal

Single burner stove and a large pan.

Slice up one BEEF polska kielbasa, brown it in pan.

Add on bag of hash browns or any potatoes + 1 can of corn + 1 can of green beans. Maybe even some bacon. Add seasoning salt and pepper to taste, cook until happy.

Add cheese on top (colby jack is best) and melt it.

Serve for breakfast, lunch or dinner.

Serves 4 easily :)

I remember making these when I was a kid! One trick I learned somewhere along the way is to put an ice cube in there before you toss it on the coals. Without you will almost always burn the burger patty.

We made those on YMCA campouts, and also in Boy Scouts.
Very simple to make, and oh so good.

Take a sheet of heavy duty aluminum foil, shiny side in. Spray it with butter flavored Pam cooking spray. Add 1 boneless, skinless chicken breast, some onion slices, pepper slices a teaspoon of water and a liberal sprinkle of chili powder. Wrap tightly. Place on engine manifold,, 1packet per person.

Check often for a firm breast. Not sure? Use a thermometer.

When you get there, before setting up camp, wrap your tortillas in foil and place on cooling engine.
Set up camp
Eat chicken fajitas.

Another one I like is quick chilli.

1 jar of onion and garlic spaghetti sauce
1 jar of chunky salsa
1 can of drained kidney beans
3 or 4 tablespoons of chilli powder to taste
Left over beef/pork/chicken/turkey/venison/roadkill etc.

This is really good over rice.

Put a piece of fish in heavy foil....top with salsa and cheese. Seal it up all nice and tight, steam for a few minutes. Darn good alone or in a tortilla.
