Your favorite camping meals

What are your favorite camping meals/snacks/food?

When i go to the desert for the weekend i usually pack:

Breakfast:
Eggs & sausage burrito's

Lunch:
Usually nothing special. Ham sandwiches.


Dinner:
Carne Asada
Hamburgers
Brat's


I am getting tired of eating the same thing on my camping trips. So i would like to see what you guys like to eat.

Usually for dinner (assume I depart my casa in the morning) I pre-marinade steaks. So all I do is fire up the grille, pull the steaks out of the bag, a few moments later its done and NOM NOM NOM. Also will get a can of greens, pull the label off of it, open and put the can on the grille with the steak.

For mornings I usually just boil some water and make insta-grits. Easy and fast cleanup. Could also do oatmeal and the like.

Same for lunch, sammiches and a pack of cookies. If I want to travel light then its crackers with sausage and cheese or just peanut butter. Lightweight and simple.

Steaks definitely sound good but the part of having to cut the steak is a downer. I take paper plates so cutting a steak would not work out that well. lol
Maybe pre cut the steak to bit size pieces though.

We make this at least once on every trip. It's a huge hit with everybody.

In a skillet, cut up the following:

2-3 carrots
1 Walla Walla onion
1# or more of Mennonite Farmer Sausage
New Potatoes to suit.
Salt and Pepper to taste

Cook until carrots and potatoes are done. Sausage is fully cooked/ smoked when you buy it.

Pairs well with Guinness, Bud, Merlot.

Steaks definitely sound good but the part of having to cut the steak is a downer. I take paper plates so cutting a steak would not work out that well. lol
Maybe pre cut the steak to bit size pieces though.

That would be kabobs which do make good camp food.

Most of the time, I'm cooking for a group, so I like to keep it simply. Breakfast is a big mess of ground sausage, potatoes, onions, peppers, eggs and cheese. Dinners are things like Jambalaya, stroganoff, stew, and chili. I'm a fan of things I can do in one large Dutch oven and will make good lunch leftovers the next day :)

I like this for dinner, very easy to make.

1. Heat up a can of chili on the camp stove
2. Put chips of your choice on plate
3. Add cut up tomatoes, avocados, salsa, cheese, whatever you like
4. Pour chili over the top and add more cheese
5. Enjoy a Henrys with it

Lunch
Usually sandwiches or something light in warm weather and I love to add a can of soup, chili, or stew with a sandwich in the winter

Dinner
Oh man, Overland Gourmet would be proud of my camp dinners!
Lemon Pepper Chicken with Rice
Southwestern Steak Omelets
Marinated steaks or pork chops
Spicy sausage, sauerkraut, black beans, & corn
Stir fry vegetables with skirt steak or chicken

And if possible all of the above dinners get washed down with ice cold Dos Equis. :ylsmoke:

Breakfast fav:

Toasted English muffin with butter and bitter orange marmelade...or...
Toasted bagel with cream cheese and lox (or bacon)...or...
Ham and egg sandwich on some sort of toasted thick tough chewy bread...
...with strong coffee or really strong black tea.

(BTW, bread can be easily toasted on a hot dry skillet)


Lunch fav:
Cold macaroni salad (I make my own) with tuna or shrimp (or salmon or croppie or catfish or sardines or...well any feesh I can find really) stirred in...
...with fresh tea - hot or cold depending on the weather.


Dinner fav:
Brown a chunk of meat (I like tri-tip best, but pork or chicken breast will also work) in a little oil with an onion and "way too much" cajun spices (similar to 'blackened' on the outside but not cooked through), cut into good sized chunks...
Chunk up some potatoes and carrots, toss in with a can of peas and a can of corn (try to get the canned peas and corn that don't have added sugar) - add water to cover...
Simmer with the lid on until the water is pretty much gone (stir often near the end so it doesn't burn) and you've got a supreme cajun-style stew and no need to make a roux for gravy - the potatoes thicken up the juice and fat as the water cooks down. Simple one pan, yet awesome and can be scaled from enough for one up to enough for a crew...
...with some chewy bread to scrape the bowl - and more tea!

(I sometimes do the cajun stew as a veggie dish without the meat. When I do that, I cut the carrots thicker and blacken them instead of the meat. Everything else is the same.)


Then late at night...
Strong hot chocolate (dark, sugar free) with brandy and a chunk of high cacao content chocolate bar melted in.

I put my paper plates in a frisbee. That way I have a hard cutting surface but then I can throw the paper plate away afterwards. Usually it kills 3 or 4 paper plates in the process.

Steak and chicken fajitas - cooked in an iron skillet or dutch oven on a really hot fire. Add in some green peppers and onions. Serve it up with tortillas, sour cream, guacamole, cheese, pico de gallo.

fried oysters - just cuz you can't cook 'em at home because they stink up the house :) I like them southern style which means corn meal - not bread crumbs. Here's a good recipe - http://floridakeysrecipes.info/2007/09/19/corn-bread-fried-oysters/ Whatever batter is left over can be used to make hush puppies.

The yakitori looks dang good!!! What kind of cuts of meat do you use?
Simple 1 or 2 course meals are best for me. Its quicker and less of a clean up.
It's usually only me and my little brother on weekend trips in my Jeep.

Keep them coming guys. This will be a good thread for other people to read too for idea's.

I picked up a new barbecue Friday (Amazon dropped it off for me :D ) as I was in need of a new one, and I saw a nice Weber Go Anywhere gas grill posted over at fjcruiserforums site, so I ordered it and a hose to convert it over to one of my bigger tanks.
Push button ignition too baby :D

Shish Kabobs
Use a variety of vegis, meats, ect.
This is what I used, and for the record, I have been a vegetarian since around 1982 (X wife thing) and I stuck with it.

Picked up all the ingredients after work Friday, and made up a huge batch to last about three nights for the July 4th holiday.
I pretty much make them this way all the time.

* Tofurkey dogs cut up
* Whole potatoes from a can
* Mushrooms (Safeway was out of smaller ones, so I used bigger ones and put them on their own skewer)
* Pineapple chunks
* Walla Walla sweet onion
* Red bell pepper
* Grape tomatoes

Served with a side dish of Knorr Rice Sides Cheddar Broccoli
The rice takes around seven minutes to cook in a covered pot, very easy.

The pics have a fish eye effect as they were taken with my GoPro HD camera.
It is such a cool little camera.
That is a freshly washed and waxed beast in the background, spent the better part of the morning detailing it, it was begging for it.
