1/3 cup black eyed peas
1 lb stew beef
1 medium onion (finely chopped)
1 tsp salt
1/2 tsp pepper
1/2 tsp cinnamon
1/4 tsp nutmeg
1 cup green onions (chopped)
1 cup leek (chopped)
1 cup spinach (chopped)
1 cup parsley (chopped)
3 tbsp lime juice

Cook peas for 20 minutes. In a 2 quart pot add meat, onion, and spices and saute until the meat is brown. Saute chopped green onions, leek, spinach, and parsley separately for 10 minutes. Add 2 cups water and lime juice to meat, cover, and simmer for 35 minutes. When meat is tender add cooked vegetables and peas and simmer 20 minutes. Serve over rice.

After a long day hiking the Red River Gorge yesterday, this was awesome.

One of those dishes that looks absolutely horrible, but I expect is delicious. Thanks for posting. I wouldn't eat it due to the beef, but definitely might cook it for the family.
