    Aging the game meat if the fridge really enhances the flavor and texture. I stumbled on this my accident as I forgot I thawed some deer loins which sat in the fridge for 3 weeks. Took them out, smelled OK so on the grill they went. What a difference! From what I've experienced it really tenderizes the meat and removes any gaminess.

    We try to hang a buck for 14-21 days in a locker depending on how long it took to get the animal to the locker and how hot it was. We found that it really helps the meat be more tender.
