    Default Thanksgiving!

    I'm solo for Thanksgiving this year, but that doesn't mean I have to settle for a subpar meal.

    I've got a Tofurkey Roast to start with. These things are surprisingly delicious. I'm not a fan of turkey anyway, so I actually like this pretend turkey stuffed with a wild rice mixture much better than the real thing. I'll cook this with a baste made with roasted vegetable stock and various herbs and spices.

    I'm going to oven roast a bunch of veggies to go with my Tofurkey. I've got a sweet potato, some carrots, some brussels sprouts, a big Vidalia onion, a handful of serrano chiles and a couple big cloves of garlic. I'll toss the veggies in some olive oil, fresh ground pepper and sea salt. Throw in some herbs (rosemary, thyme, herbs de provence, maybe a few other things, depends on what's in the cabinet) and throw them in the oven.

    Once these are well underway I'll put the Tofurkey and veggies in one big pan and let them all roast together for awhile to finish up.

    In the meantime I'll have a fresh loaf of bread finishing up in my bread maker. It will be made from a whole wheat mix (no point in reinventing the wheel). I'll crack a bunch of pepper into it, as well as add some rosemary and thyme. Once it starts to form a crust I'll drizzle olive oil over the top and sprinkle on a bit more rosemary and some sea salt. It's sooo good.

    I'm going to roast some coffee beans tonight (a particularly phenomenal Costa Rican bean) so I'll make a pot of freshly ground coffee to enjoy with my meal. And I've got a 6 pack of Guinness Black Lager and a 12 pack of Sam Adams Winter Classics in the fridge to enjoy for the rest of the weekend.

    So, what is your address? I will be right over!

    Nothing fancy for us this year. Everybody likes a traditional Thanksgiving meal, but we will be brining our turkey with lemons, sage, and rosemary. I also think I am going to make a cranberry salsa, maybe with habaneros for a little kick! We will see.

    Mostly traditional, other than I do a beer butt turkey on the grill.. I've done them this way the past few years and they always taste great.

    Gonna try my hand at making a pumpkin pie. Love to cook, but not bake so it may or may not work out.

    we are having :
    leg of lamb, stuffed with pear, sage, salt, pepper and olive oil
    turkey marinated in cranberry and pineapple juices
    purple mashed potatoes (no dyes added)
    breads of all types
    stuffing
    berry pie with kahlúa cream sauce
    and probably a bunch of stuff I forget ...

    I'm at the farm scouting out a new camp site at the farm. So for me it's backstrap thats been in a jackdaniels bag for 24hrs+ grilled vegs. , homemade stickbread & rolls, cranbarry. applepie . all on a open fire man I LOVE the outdoors

    lol, I get to kick back and do nothin today. My wifes sister is cooking this year. I assume she is traditionally roasting the turkey and fixings but we will see. I would have prefered to do it myself but this family does things different

    Veggies are cooking away. 4 different friends invited me to their family celebrations today - I'm probably going to swing by 2 of them. Life is good and it's great to have these reminders of all we can be thankful for.

    Dayum Darin! I didn't expect to see the word tofurky anywhere! I've got coconut milk nog and a vegan pumpkin pie, and then maybe later have the spanish rice and soyrizo going this afternoon. That is about as much as I will splurge for this month, as I've got my bills to pay off if I'm going to travel next year!

    I'm thankful for what I have and the fact that I know that I can count on myself. I've reached the point in my life where I must stop to take inventory of myself and decide where to go next.

    Anyway, how did you get to tofurky?

    I've been an on and off vegetarian for probably 1/2 of the last 10 years or so. Many of my closest friends over this same period of time are also vegetarians, some are vegans. I am not a vegan, although much of what I eat is vegan.
    With the exception of occasional fish and very rarely eating sausage (I am genetically required to enjoy wurst), I'm going on 2 years doing this again. I eat Tofurkey, tempeh, saitan and some of the other pretend meats to add a little variety to my palate. Some of the pretend meat is quite good, some is quite horrible. Tofurkey happens to be one I really like and I'm looking forward to chowing down here in awhile.
