I'm solo for Thanksgiving this year, but that doesn't mean I have to settle for a subpar meal.
I've got a Tofurkey Roast to start with. These things are surprisingly delicious. I'm not a fan of turkey anyway, so I actually like this pretend turkey stuffed with a wild rice mixture much better than the real thing. I'll cook this with a baste made with roasted vegetable stock and various herbs and spices.
I'm going to oven roast a bunch of veggies to go with my Tofurkey. I've got a sweet potato, some carrots, some brussels sprouts, a big Vidalia onion, a handful of serrano chiles and a couple big cloves of garlic. I'll toss the veggies in some olive oil, fresh ground pepper and sea salt. Throw in some herbs (rosemary, thyme, herbs de provence, maybe a few other things, depends on what's in the cabinet) and throw them in the oven.
Once these are well underway I'll put the Tofurkey and veggies in one big pan and let them all roast together for awhile to finish up.
In the meantime I'll have a fresh loaf of bread finishing up in my bread maker. It will be made from a whole wheat mix (no point in reinventing the wheel). I'll crack a bunch of pepper into it, as well as add some rosemary and thyme. Once it starts to form a crust I'll drizzle olive oil over the top and sprinkle on a bit more rosemary and some sea salt. It's sooo good.
I'm going to roast some coffee beans tonight (a particularly phenomenal Costa Rican bean) so I'll make a pot of freshly ground coffee to enjoy with my meal. And I've got a 6 pack of Guinness Black Lager and a 12 pack of Sam Adams Winter Classics in the fridge to enjoy for the rest of the weekend.
