Why not get one of the 110 ambulances, with the stretcher racks you could sleep two comfortably on one side and set up the other side with sink fridge cabinets etc.

I thought I'd post this link for some ideas if you decided to go for a simple storage and sleeping set up, with cooking and living outside the vehicle, but you could fabricate something similar for a lot less than the cost of these units: http://mobilestoragesystems.co.uk/
The chests fit between the wheel arches, so several used in conjunction, perhaps with a drawer unit at the back if preferred, with a roll-up, inflatible or stackable foam section matress on top would be a quick and easy fit and would give the safest, cheapest and most comfortable bedding. It might work well if you plan to travel warmer and drier regions, but if you expect a lot of cold or wet conditions, something more akin to Mike's build or the pop-roof conversion would be far more comfortable.
