    Potentially... but I think all you need are 4 macro-adjust legs (just legs with pins), and some way to 'micro' adjust the height of the hitch receptacle, so you can easily remove it from the truck. Or you can lift by hand, depending on how heavy the sucker will be.

    I'm thinking ideally it would be <200lbs, something most could muscle into the receiver. I do realize getting something that heavy and large could be tricky to get the hole lined up. Another thought is have 2 macro-adjust legs at the rear and near the hitch have a fold -up jack like Kyle mentioned that you could micro adjust. That might make sense because even though the idea is for it to not be heavy, we know how people tend to pack stuff.

    K.I.S.S method simple diamond plate box that is custom to your design.
    steel 2" reciever mount on the bottom, Seperate leg support to set it on when you arrive.
    Large D handles on the side at corrrect height for two people to lift.
    Dividers and drawers made of aluminum. Pots and stove low to the bottom for good
    load handling. fold out sides to hold cooking items.

    There are many fab shops who would take on a project like this. Diamond plate runs $150.00 a 48 x 96 sheet around here.
    Look into technical schools too for fab work.
