So on an overland adventure, a camping breakfast of eggs and chorizo sausage is my idea of living the dream. Sure there are more healthy choices but is there a better overland breakfast than eggs and cheap spicy sausage meat like substance?

Just about every culture has a take on this (eggs and cheap spicy meat) breakfast... Let's see your version.

I used to eat like that but stopped after all of the heart attacks.
Now it's just potatoes, onions, peppers, ketchup, and coffee.

Sorry for the mini-rant... back on subject. When I lived in Los Alamos, NM, we made "traditional" Huevos Rancheros:

fry a corn tortilla, shredded cheese, then put a fried egg on top (refried beans under the egg optional). More cheese, green onions, cilantro and the spiciest salsa you can enjoy.

You can cut it with a sharp knife on the plate, or pick up and roll like a taco. Yum!

Oh, and for a real New Mexico treat, Frito Pies are easy camp fare (double yum!)

Yeah, that's huevos rancheros. The OP described chorizo con huevos. Both good, but one is huevos rancheros, the other is.... not. Also, it's plural. If it's going to be "official" we might want to get square on those things.

"Period"? As in yours is the final say in the matter? Really? Yes, cholesterol is in animals... HDL, not LDL. LDL comes from metabolizing sugar, such as, well sugar, and ANY grain (rice, wheat, oat and especially corn). That fat around your heart is from sugar. That fat specifically around your liver is from fructose. The things sugar does to the blood insulin levels is not to be believed. My cholesterol dropped over 40 points (to 180) by reducing sugar - and I still eat my USDA prime steaks, bacon, baby backs/pork etc. But be sure to choose meats based on... what the animal eats. Grass fed is very superior. Cheap meats = cheap feed, which = bad feed with hormones and antibiotics.

Remember, doctors are always "practicing" medicine. They're human too, and will try to sway you. Do your own research.

"Fat makes you skinny". That's something near the title of a new book out by an MD. It also happens to be a quote from my grandmother over 50 years ago. She was right! ;)

Rediculous , the yolk is full of fat and cholesterol , that's why they make cartons of egg whites!!! Very high in protein . Red meat is also full of protein but also fatty tissue that tends to clog arteries , thus the reason for cardiologists to recommend chicken for meat proteins .
If your going to eat junk on a regular basis , your probably going to have health issues somewhere down the line. That's not to say people who eat " correctly " as in healthy diets don't have issues , but cuts your risk of diabeties , heart issues , obesity etc...
A balance of healthy diet and your splurge food is essential .
But a lot of people come up with whacked out statistics to justify what they do or don't due with exercise and diets.
If you want to "chow down " go ahead, it's your life ...live it the way you want to. Smoke your cigarets , chew that tobacco. Drink alchol on a regular basis and for god sakes get as much caffeine as possible !!
But don't be shocked when bad things happen. And yes they tend to happen as you get older, because you have mismanaged your body for so many years.

Ok now pile on and tell me and the world why this post is wrong and pompous . It's what people do when confronted with actual facts ..especially ones they don't subscribe to.

Fats make you skinnier :) lol. Because it's in a book and Granny said it , well it must be true :). Next time your at Denny's or at the next Expo look at the folks eating that bacon and fried eggs in grease . Yep there all skinny !!!

I was literally a poster-boy for a vitamin/supplement company, ate low-fat meats, lots of veggies, got PLENTY of exercise. No refined sugars at all. Lots of non-fat milk & yogurt though.
Had my string of heart attacks at age 44 with a total cholesterol of 127, good blood pressure, no belly. 100% occlusion of the left lower descending artery --- a widowmaker. I survived them because of collateral artery development from years of cardio; my artery had been clogged for years.
I was premed in college. Went back to school to study nutrition in '92. My favorite professor was vegan but I didn't listen to him...
An NMR LipoProfile reveals more about what's really going on in your arteries. My biggest bugaboo was actually calcification inside them.

After the heart attacks I was doing pretty well. Doctor put me on lots of meds. Big statin and other crap.

Then I got cancer. Bam.
After the treatment I spiraled downhill fast. In late January 2012, after seeing a number of specialists, I was handed a card for my local hospice. 3-4 months was the prediction.
That's when I followed the Dean Ornish plan, watched Forks Over Knives, read the China Study, went vegan.
And didn't die.

I take one little blood pressure pill a day now. Hopefully I can get rid of that soon too.
Eat what you want but don't fool yourself. You don't need animal proteins at all. B12 is the only thing I need to supplement because of modern farming techniques.

Yeah that sucks for sure. There are things in genetics , predisposition for certain ailments. Stress plays a big roll. But the bottom line is and you hear stories like yours, perfectly healthy life style and still something happens . My mother inlaw is the exact opposite of you, ate fats, sugars ...heck I could swear she could eat a cow in one sitting. Obese , diabetic, berating disorders ! You name it . She turns 86 in January and is going strong! Go figure

I do wish you the best of luck. Your life is a testimonial to not giving up! But also to , I suppose everyone's body's react differently to every lifestyle change. What works for one does not necessarily work for the next. I'm happy you found what works for you.

You are right. Its really hard to say what really effects us, we are all different. My great Grandma died one week before her 113th B-day. She put Half in Half in her grape nuts every day. Butter on everything. animal proteins daily in very small quantities. She was never an once over weight. Hell, Nat Geo even did a special with her. The one thing that she did not have was any stress and never was negative about anything. She never drank or smoked. How did we get off the subject of the best breakfast ever!

Eggs have all the GOOD cholesterol. Or haven't you read anything in the last 5-7 years about eggs? A cardiologist, an MD nutritionist (other than Mercola) and my personal physician, an internist, all agree that 1 egg each day is super super healthy for just about everybody, especially for those with heart /disease/ issues. Veggies are a must - should be 2/3 of your plate of food. But our bodies DO need animal fat. No matter what someone's trying to sell you.

And for one last fact. before I find myself in bigger a hornet's nest of misinformation, Half and Half (granny's): Did you know, that the more fat in dairy the LESS sugar? 14 grams of sugar in non-fat milk. 12 grams of sugar in whole milk. 1 gram of sugar in half-n-half. ***0*** (as in ZERO) sugar in heavy cream!
