JK’s are cool and definitely great vehicles, but in my opinion, the TJ/LJ is the last Jeep to have the “charm” of the originals.
I’d keep the LJ.
My LJ is the only vehicle I’ve owned that seems to increase in value every year.

I’m probably exactly the target for it- Mid 30’s, outdoors guy and construction manager.
Currently, My LJ stays in “mini pickup” mode most of the year with just a bikini top/wind jammer.
My ideal Jeep pickup would be single cab, 6’ bed...

2.5 w/33’s is probably plenty. Currently I have a Frankenstein lift of JKS/Bilstein/ProComp parts, but basically 3” suspension and 1.25” body lift.

Just to make sure I’m clear, all that I mentioned was about how we packed our LJ.
The JKU is a whole different story. We’ve definitely added a lot more creature comforts.

For the reasons you mentioned, we ended up buying an Oztent.
Since 9 times out of 10, it’s me setting everything up and packing back up while she tends to the kids, having a tent that sets up quick helped a ton.
The other thing we bought that helped was a cookset where everything for 4 people...

I’ve slept in one half alone down to 36° with a hot water bottle in the foot.
Sleeping together, we’ve been comfortable at temps a little lower than that.
