Your wants include "newer truck" and "18-20 mpg", so first gen Tundra doesn't need to be on your list. I say this as the owner of a 2006 Tundra with 105k on it that's in excellent condition. It's a great truck, but it's well over a decade old and wouldn't get 20 mpg downhill with a tailwind...

I feel your struggle OP. I'm 6'4" with a 36" inseam. Even though I only weigh 165 pounds, I still find modern midsizes to be a little cramped. My first truck was a '96 Tacoma extended cab and even though it was tiny I didn't find the cab as claustrophobic as the modern Tacoma or Colorado/Canyon...
Did you have to connect your unit to the truck's OBD port for it to recognize that you're in park?
I have a similar Kenwood unit with wireless Android Auto. I love the unit but Android Auto will only complete set-up if the truck is in park, and my truck isn't communicating that to the head unit...
Excellent rebuild. This will be a really nice 4Runner when you're done.
I cringed when I saw those cinder blocks under the jackstands, though. I have seen way, way too many of those shatter to trust them.
