Just be aware that that extension requires a 2.5" X 2.5" hitch on your vehicle to start with. Not 2 X 2!
Northern tools sells a 48" long 2" X 2" OD extension tube. Meant for trailer builders! But you have to weld on the solid bar part that goes into your hitch.
More than enough for a 340 lb...
Wow! That worked out do well for you. I have only one suggestion.
When you are expecting more guests than you have on board water capacity, have them carry in their own water jugs for the camp out. This way you don't have the weight to haul, and everyone has enough for their needs.
I did similar fenders for my cargo trailer only I built some pockets in the back of them. These.pockets are sized to strap a military 5 gallon gas or water can in. They also make great steps so I can stand in the top of the fender and adjust the solar panel angle.
That's because the bender you are using if for schedule 40 black iron PIPE.
Tubing is much too thin wall to bend without kinking using that bender.
I have one of those harbor freight benders too. But it's used for pipe.

How about building a rear spare tire carrier using a hub, bearings and spindle to mount the tire on?
Then put the axle & hub on a crank down trailer jack. Like you'd find used in a 5th wheel or commercial trailer.

I can relate to the rear hatch warping issues.
That's why my rear hatch is flat with corners instead of curves.
Plus it will match the rear profile of my Isuzu Rodeo I'll be towing it with.
