Pop-top wall fabric: What's the best, easiest to work with for a DIY job?

Hey all, I have the notion to build myself my own pop-top camper and what fabric to use for the walls of the pop-up portion is a bit of a conundrum to me. I've taken a look at FWC walls and have a CVT RTT, I'm wondering if there's a middle ground between these two. I imagine whatever FWC's are using it's hard to get and likely hard to work with. My mother, who is gifted on the sewing machine and who has a semi industrial sewing machine will be making the fabric walls, I need a fabric that is at the very least water repellent but thick enough to stop a decent amount of wind. I'm kind of a fish out of water in this department, can anyone learn me up? Thanks.

Mine is made from PVC coated nylon "truck tarp' material. It was made in 1988, and still going pretty strong. Easy to find on the web or at awning shops locally (but you'll pay more)
