Also, my girlfriend has never really gone offroading before, if anyone has any suggestions for Colorado light offroading/overlanding, let me know. I'm just watching youtube videos to try to find something appropriate.

Don't know Colorado enough to Rx specific routes, but I can offer this advice, as someone who took my wife from "Never camped, EVER" to "Seasoned Overlander":

Keep her warm. Keep her well fed.

There are a lot of particulars, but if you can hit those two points, you'll go a long way towards her enjoying herself enough to want to do it again.
