U-haul Cargo Trailer Conversion

I picked up this old Uhaul 4x6 trailer for $500. I'm heading to Yellowstone and Teton in 53 days in my Land Cruiser with the wife and four kids. I have many things on a long term wish list for this expedition trailer-to-be, but the most immediate is to add some form of fold out/roll out camp kitchen. I've done some casual browsing in the forums and the stickies at the top of this forum section, but most trailers are built from the ground up or converted "truck bed"style trailers from what i can see. Does anyone have any links or suggestions for converting a cargo trailer to an expedition trailer?

The exterior dimensions of the cargo box are
51" W x 71" L x 56" H
